California Raisin Cinnamon Ginger Pancakes (Recipe)


The festive season is fast approaching! There's nothing better than waking up to a sweet breakfast, right? Healthy and easy to make, these protein-packed pancakes are also laden with naturally sweet and nutritious California raisins for some sweetness. Did you know California raisins are the best raisins in the world due to their superior quality and high safety standards?cThey're an extremely versatile ingredient that can be used in various culinary delights, from sweet to savoury. Think raisin cake, raisin cookies, raisin bread, raisin pie, raisin pudding, raisin coleslaw, biryani rice with raisin and the list goes on. Healthy and tasty, California raisins are packed with nutrients making them a great snack for everyone. 

I love adding protein powder to my pancakes for an extra dose of protein and California raisins for some natural sweetness. Adding California raisins to the pancakes truly takes them to a whole new level as well as a boost of nutrition. I've also spice up my pancakes with cinnamon and ginger which not only add a festive touch and wonderful flavour, but also help boost the immune system. 

Meanwhile, I am really excited to share that I'm participating in the 'Sweet Naturally Like & Win' contest organised by California Raisin Asean. Here's my California Raisin Cinnamon Ginger Pancakes recipe!

California Raisin Cinnamon Ginger Pancakes 

Ingredients : 

180g flour
1 tbsp baking powder
1 tbsp protein powder
1 tsp ground ginger
1 tsp cinnamon
2 tbsp sugar
1 tsp salt
2 tbsp melted butter
2 eggs
300ml milk
1 cup of California raisins
1 scoop of Greek yoghurt (topping)

Method : 

1) Whisk flour, baking powder, protein powder, sugar, salt, cinnamon and ground ginger. 

2) Heat milk in the microwave until lukewarm.

3) Whisk milk, egg and melted butter until combined. 

4) Make a well in the center of the flour mixture, pour milk mixture into the well and mix well with a fork. 

Tips : Let the batter rest for at least 20 minutes for fluffier pancake. 

5) Lightly brush the pan with melted butter. Spoon batter onto the pan and gently spread into a 4-inch circle. 

6) Sprinkle a few California raisins onto the pancake. Flip when the edges start becoming dry and bubbles form throughout the pancake. 

7) Brown on both sides and serve hot with topping.
